Most of our Patés are from the family run Conserverie Quatrefages in St Jean de Bruel in the Aveyron. This small family business set up by Bruno Quatrefages and now run by his son Nicolas, makes patés using local ingredients and no colourants or preservatives.
From la Charcuterie Basquaise in St Jean Pied de Port (a town up in the mountains on the pilgrim route to St Jean de Compostelle, our Basque pork productsare from free range pigs reared outdoors (all year) in the woods of a Pyrenean mountainside. They are free foraging, only being fed in the winter months when grazing/foraging is scarce.
