Arbois Vin Jaune 14º 62cl 2004 £35.30
The 'yellow wine' for which the Jura is best known. The Savagnin grapes are late picked and after fermentation the wine is stored in oak casks for a minimum of 6 years and 3 months. Evaporation (13cl - known as the angels' share - are lost from every 75cl, giving the odd bottle size) allows air into the cask and and a film of yeast (or voile) forms on top of the wine. In taste its nearest familiar relation would be a fine old fino sherry with a slightly nutty and spicy nose and like sherry it is drunk as an aperitif but also with nuts or cheese or foie gras.
