Confit de Porc Basque (filet) 750g £16.25

Confit of Basque pork fillet preserved in pork fat from free-range pigs. Serves 4. If you are 50 or over you may remember that pork used to taste like this. Slice or shred & fry lightly or use cold. Serves 3 large or 6 smaller appetites.
We slice it thinly, lighly fry in the fat and add them to pasta with broccoli. A third of the filet feeds 2 of us amply.
Slice the rest and use from frozen. Very handy.
