Apart from the feet and the beak the French don't waste anything from a duck. To those who find the idea of 'gizzards' disgusting, think of them as 'gésiers' !  They are delicious sliced in salad. In fact if you have had one of the 2 salads listed above, you have tasted gesiers.

Duck confit (French: confit de canard) is a French dish made with any meat of the duck: breast, leg, wing, gizzards. While it is made across France, it is seen as a speciality of Gascony. The confit is prepared in a centuries-old process of preservation that consists of salt curing a piece of meat (generally goose, duck, or pork) and then poaching it in its own fat.

    Gesiers are a delicacy unavailable in England but essential in France to the delicious salads found about. hey are the gizzards - liver/kidney/heart cooked in duck fat. They are usually available in tins as here but sometimes in vacuum packs. They are totally scrumptious and worth every penny.
