A dry white from the local Len de l’El grape picked late and fully fermented out to give 14.7% alcohol then aged in acacia wood for 2 years. This imbues the wine with a much subtler taste than oak leaving less tannin and enhancing the freshness and the fruit. A wine to be drunk cold (but NOT ice cold) as an aperitif or with cheese like comté or cheddar or incorporated with cream and mushrooms to make a rich sauce for chicken ‘poule au pot’.
