  1. A load of tripe? - no, a true gourmet treat

    Never under-estimate the power of well-prepared tripe to warm the cockles of the heart and bring comfort to the soul.

    Why tripe and other offal, which was once were British staples, have disappeared from our butchers says much about fashion-led eating in this country - snails, yes; oysters, yes but offal gets a no-no every time and ends up as pet food. What a waste!

    My taste for tripe was acquired years ago in French provincial kitchens and continued to develop during many years living in 'la France Profonde.' But seeking butcher's tripe in this country proved to be a fruitless pursuit so I turned to the Web seeking ready made imports. Confit Direct came to the rescue.

    At first I had sought the justly famous dish, Tripes a la Mode de Caen but amazingly it seems not to be available anywhere. Fortunately I decided, a bit reluctantly, to try Confit Direct's Castelnaudary version instead. What a revelation! It proved to be in no way inferior to the Normandy recipe; choice morsels of various tripe varieties with ham lardons in a slightly piquant tomato sauce, perfectly seasoned. All it needed was careful heating to be ready for the table. My wife, a Parisian, served it with buttery silky smooth creamed potatoes that soaked up the delectable juices to perfection. We followed with a simple crispy salad lettuce dressed with olive oil and fresh lemon juice. A perfect meal on a cool autumn evening - or any time else.
